OK, here is a really yumm-o chickpea salad, and it is so easy.
I can't stop eating it!
It is a ratio of 1 of everything
1 15 oz can of chickpeas (rinsed well)
1 avocado diced
1 clove of garlic finely minced
1 handful of Italian parsley rough chopped
1 lime zested and juiced
1 tablespoon olive oil
1 shallot small diced
1 pinch red pepper flakes
salt and pepper to taste
1. stir together garlic, lime zest, lime juice, olive oil, red pepper flakes, salt and pepper
2. stir in chickpeas and cover well
3. stir in parsley and shallot
4. stir in avocado
